If your husband is anything like mine, than something like this:
is just the kind of meal he's been dreaming of.
This dish combines 2 of my husband's favorite foods: barbecue and Mexican. It was a huge hit at dinner last night, and it's super easy (especially if you've got some left over chicken to use up).
Barbecue Quesadillas
1 chicken breast (cooked) for every 2 quesadillas
chopped onion (as much as you'd like. I probably used 1/8-1/4 cup for our 2 quesadillas)
sharp cheddar cheese, shredded (just a little bit to sprinkle on each quesadilla)
your favorite barbecue sauce - 1 cup(ish) for every 2 quesadillas
Tortillas (brand and size are up to you, ours were probably 6-8inches)
Cooking spray, or cooking oil and a basting brush
Begin by chopping up your chicken, or shredding it if you prefer. I didn't cube mine, but instead thinly sliced it into bite size pieces. Set it aside for just a minute.
Cut up as much onion as suits your tastes. Saute your onions in skillet with some cooking oil until tender (I threw in some fresh garlic as well). Then add your chicken and barbecue sauce, lowering the heat to a simmer and covering to cook/warm.
Meanwhile, spray, or brush, 1 side of each of your tortillas with oil. Lay oiled side down on a cutting board, cookie sheet, wax paper, etc. On one half of the tortilla sprinkle a little bit of shredded cheddar. On top of the cheddar cheese, spoon some of your barbecue chicken mixture. Fold the other half of the tortilla over the chicken, and brown each side in a skillet over low heat. Turn carefully so the chicken does not spill out, and watch so it does not burn.
Dish it up and enjoy!
