Nothin says a new year like...

Nachos!

That's right. A great way to issue in 2010 is with some homemade nachos. Easily adapted to fit vegan and vegetarian friends alike. I bet you have your favorite way to fix these up, but here is mine:
Nachos

  • ground turkey/beef/veggie ground round, etc.

  • 1 packet of taco seasoning

  • 1 can of rotel (diced tomatoes with chile peppers mixed in)

  • 1 can of black beans

  • 1 bag of multigrain tortilla chips

  • a block of cheddar cheese (or soy cheese) (to shred)

  • a healthy dollop of sour cream (or the vegan alternative)
Brown your ground ________ (or shred your chicken and place it in a pan on the stove, etc, etc.). Once that is done and drained, start your black beans in a saucepan on the stove (medium low-ish). Add 1/2 can rotel to both the black beans and the other half to the meat (*note: I never use the juice from the can because I am a spice WIMP. But if you like it hot, by all means...). Now is also when you add your water and the taco seasoning packet to the meat (or meat alternative).

While both the beans and "meat" are simmering, spread a good handful of chips on  plate, dig that sour cream out of the fridge and shred enough cheese to go around. Once the beans/meat have simmered to your liking, take and spoonful of beans and spread them on top of the chips, doing the same with the meat. Garnish with your cheese and sour cream and enjoy!

-And just incase I haven't consumed enough calories this holiday season, I have an icecream cake setting in the freezer right this very moment. Stay tuned...
