Because I know you've been wondering...

What in the world did she do with that left over quinoa?
This morning I will answer that question, if you promise to still be my friend when you find out the answer.

I took about 2/3 cup of my left over quinoa, spun that around in the blender with a little bit of almond milk and (no I did not drink it) added that to my creation of

Spinach Pancakes:
  • 1 cup flour (I used whole wheat and rye)
  • 1/4 - 1/3 cup oatmeal (blended into powder)
  • some flax seed (I probably added 3 Tbsp)
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 Tbsp sugar
  • 2 handfuls of spinach chopped up in the food processor
  • 2 Tbsp sour cream or vanilla yogurt (whatever you have on hand)
  • and the (optional) quinoa and almond milk (Barley would also probably be very good)

Now, I know what you're thinking. It's probably the same thing my dear friend Lauren said to me when I told her about this creation. But you can't knock this until you try it. And if you just can't bring yourself to throw in the spinach (or the quinoa), then leave them out and use the rest of the ingredients to make "normal" pancakes. It's still really good and healthy.

Here goes:
Mix together all of your dry ingredients: the flour, baking powder, salt, sugar, flax seed, and oatmeal. Add in enough water (probably about 1 1/2 cups) to make the batter smooth: not thick, but not runny. Then stir in your spinach, sour cream/yogurt, and quinoa - adding more water if necessary. Cook like normal pancakes, browning on each side.















See? They're not so scary! And since you're going to pour syrup on them, you would probably never know the difference if I hadn't told you (except for those tell tale green flecks of spinach). :o) Make them or don't make them, but I love them!

We also got this really awesome waffle maker from this really awesome friend as a wedding present, and yesterday we had homemade waffles that were super yummy. They were more "puffy" than normal waffles, which is how I like them. I will share the recipe with you soon, but for now I need to shower and head off to school because I can finally get in to my classroom!
