Sloppy Joe's

Actually, it's not a recipe for sloppy joe's so much as it is one for hamburger/sandwich/sloppy joe buns. Here it is:

Whole Wheat Hamburger Buns:
  • 1 Tbsp yeast
  • 2 Tbsp. sugar
  • 1 1/2 cups warm water

Dissolve the sugar in the warm water and then add your yeast. Let proof (in other words, sit around until frothy) for about 10 minutes. Then mix in:

  • 1 tsp salt
  • a few Tbsp oil (2 or 3)
  • 1/8 cup flax seed meal
  • 2 1/2 cups bread flour
  • 1 1/2 cups whole wheat flour

You want to add the flours alternately, and one cup at a time. When the dough gets too thick to mix with a spoon, turn it out onto a floured surface and knead in the rest of the dough (you may need more; you may use less). Your dough should be smooth but not tacky-sticky.

Place it in an oiled bowl and turn to coat the dough in the oil. Let rise in a warm place for about an hour. Then, break the dough into 8 "equal" pieces and shape into bun shaped rolls (remembering that you're going to let it rise again, so it's okay if they look a little small).

Place your buns on a baking sheet (or 2 - I use 2) and let rise for another 30 minutes.

Bake at 375 for 20-25 minutes.

Here's John's partially enjoyed sloppy joe on one of these buns:
