Vegan!

2 of my most favorite vegans (and people in general) are hitting the open road today and roadtripping out west (If you don't know who I'm talking about, just check out those gorgeous/handsome faces in my favorite things post), so I thought I would post one of their favorite sweets here for you to make and enjoy (Goobsie can just about eat her weight in these cookies).

Seriously, don't be scared of the "vegan". It's tasty, cholesterol free, and animal friendly. Plus, Chris and Grace will think you're awesome.

Vegan Peanut Butter Cookies:
  • 1 cup peanut butter
  • 1/2 cup vegan butter (i.e.: Earth Balance)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 "vegan" egg (you can use Bob's Red Mill Egg Replacer, or boil some flax seed & water - 1/4 cup of this goopy mixture is equal to 1 egg. PS: You can also use these alternatives in "regular" baking for a healthier product)
  • 3 Tbsp. soy milk
  • 1 tsp. vanilla (again, because I love vanilla)
  • 1 & 1/4 cup flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda

Cream the PB & butter.
Add in the sugar.
Stir in your vegan egg, soymilk, and vanilla.

In a separate bowl, mix together your flour, salt, and baking soda and then add it to your peanut butter mixture. Shape the dough into little balls and do the fun fork criss crossy thing (I won't lie: this is my favorite part about baking peanut butter cookies) and bake at 350 for 10-12minutes.

Let cool and then hide them from the Goob or she'll eat them all. :o)
