Tonight's dessert

I wasn't really intending to make a dessert tonight, but as I was fishing through the fridge for my Pink Lady this morning (favorite apples EVER! Trader Joe's has them for 49 cents a piece versus $2.49 a pound incase you are interested), I noticed that it was just about time for the fruit in the fridge to be used up and a trip to the produce department was on the horizon.

So I did what any other compulsive baker would do:
I threw it all together in a Summer Berry Apple Crisp (formerly titled: Bake this Fruit Before it Goes Bad)

Here's what I put in it:
  • 2 - 3 (I don't remember) apples, peeled and thinly sliced (but not too thin, as apples cook down when they bake and you don't want mush)
  • 7 - 8 strawberries, sliced
  • a handful of blackberries
  • 1/3 cup sugar
  • a few shakes of cinnamon
  • a dash of nutmeg

Mix all of that in a bowl and pour it into a buttered pie pan or square baking dish.

Then, mix together:

  • 1/3 cup flour
  • 1/3 cup cooking oats (oatmeal before you add the water)
  • 1/4 cup butter
  • 1/2 cup brown sugar

Using a fork until its crumbly and sprinkle it on top.
Bake at 375 for 40 or so minutes, and there you have it. We haven't eaten it yet, so I'll let you know if it's actually good (or not) a little later.

Dinner tonight is pretty simple:
Cheesy beef boats, baked beans, and homemade baked french fries.

The cheesy beef boats (at least when I make them), don't actually contain beef. They're a childhood quick dinner that I am bringing into our home because they're quick and tasty and just something different. It's kind of like a twist on the sloppy joe, if you will.

All you do is brown your ground _____ (again, I use turkey because I'm not a huge fan of ground beef). I usually will add in some chopped onions, etc. if I have them laying around. Once your meat is browned, drain and add a bottle of chili sauce (i.e.: Heinz) to the meat. -You can usually find this in the grocery store by the ketchup, bar b que sauce, etc.

Now, turn your broiler on, and grab some hamburger buns, hotdog buns, bread of your choice (they're called cheesy beef boats because if you use hotdog buns it actually resembles a "boat") and put some meat on it like an open faced sloppy joe. Top it with some shredded cheddar (as sharp as you can handle), and stick it under the broiler until the cheese melts (please keep an eye on your broiler... I almost start a fire everytime I broil something, oops!). Voila! It's that simple.

Happy Friday, my fabulous readers! Enjoy this most wonderful weekend!

  1. Okay, your Mom sent me the link to your blog, and I read it from end to beginning! Love it! I'm going to have to learn how to blog one of these days... (Maybe you'll show me in exchange for hemming a certain bridesmaid's dress??? Hmmm???) Glad you're enjoying your summer off. Can't wait to see you in Michigan soon. Love and smacks, Aunt Kathy
